Chef Sanjay Mandhaiya is the Executive Chef of Pappe and Karravaan. Raised in a diplomatic family, his upbringing across multiple countries instilled a deep appreciation for global cuisines and cultural exchange—an influence reflected in his vibrant, cross-regional cooking style.
With more than 30 years in the culinary world, Chef Mandhaiya has developed a signature approach that blends authenticity with inclusivity, crafting dishes that resonate across cultures. His first DC restaurant, Pappe, opened in 2018 and quickly became a Logan Circle favorite. His newest venture, Karravaan, opened at the Union Market District in 2025 and draws inspiration from the Silk Road, celebrating the movement of people, flavors, and traditions through time.
